We’ll explore what separates a good olive oil from an exceptional one, what its flavour can tell us about its origin and production, and which styles work best with salads, pasta, fish, for finishing dishes or for cooking.\u003c\/p\u003e\n\u003cp\u003eEdoardo Rinaldi is a professional olive oil taster and a fourth-generation member of the Rinaldi olive oil family. Together with his cousin Matilde, he is now closely involved with Meriggio, a historic brand founded in 1924.\u003c\/p\u003e\n\u003cp\u003eMatilde and Edoardo have also begun an ambitious new chapter in the food history of the Langhe.
