These large, pitted green Gordal olives are a Spanish classic, especially known for their plump size, firm texture, and succulent bite. Their special charm comes from the spiced brine and the clear yet pleasant warmth brought by guindilla chili.

The olives come from Andalusia, from the olive-growing regions of Seville, where Gordal is one of the most well-known table olive varieties. They are preserved in a spiced brine that highlights the olive's own texture and makes them a particularly successful aperitif olive.

The texture is firm and succulent, and the taste is salty, fresh, and gently spicy. Serve as an aperitif on their own, with Manchego and air-dried ham, or alongside cocktails; a dry sherry, cava, or ice-cold lager are particularly good drinks to accompany them.
