Bunet is one of the oldest desserts in Piedmont. A spoonable cocoa and amaretti pudding traditionally served at the end of a meal.

The texture is soft and dense at the same time. Cocoa adds depth, amaretti almond aroma and a small amount of amaretto liqueur ties the whole thing together. Sweet, but not heavy.

The name bunet refers to an old hat, the bonèt. In the Langhe, it is said that just as the hat is put on last, the bunet is also served last - at the end of the meal.

Store in the refrigerator for about 30 minutes before serving to soften the texture and open up the flavors. Open the glass jar and turn it upside down on a plate to let the wonderfully juicy sauce drip over the pudding.

Works as is, with roasted hazelnuts, or with whipped cream and fresh berries.
