Mons Fromager Affineur
Mons Fromager Affineur is one of France's most esteemed cheese affineurs – a name that constantly comes up when discussing truly excellent French cheeses. The company's roots are in Saint-Haon-le-Châtel in the Loire region, where Hervé Mons and Laurent Mons have, over decades, built one of Europe's most renowned houses specializing in cheese affinage.
Mons is not a cheese dairy, but an affineur. Their work begins the moment the cheese leaves the producer. Cheeses are aged in their own cellars under very precisely controlled conditions – sometimes for weeks, sometimes even for years – so that each cheese achieves exactly the right texture, aroma, and balance. This is particularly evident in raw milk cheeses, where the origin of the milk, animal feed, seasons, and affinage strongly influence the cheese's flavor and texture.
Mons works with small French farm cheese dairies across the country and is particularly known for helping to preserve many regional cheese traditions. Their selection reflects the entire spectrum of French cheese culture: mountain cheeses, small goat cheeses, washed-rind classics, long-aged alpine cheeses, and rarer local specialties rarely seen outside of France.
Rolling Cheese acts as an importer of Mons Fromager Affineur products in Finland. What particularly interests us about working with Mons is their approach to cheese as a living product – one that constantly changes as it ages. Cheeses are not just seen as products on a shelf, but as part of a long French culinary tradition, where milk, animals, seasons, affinage, and patience are evident in every piece.
Many of our most beloved French raw milk cheeses come precisely from Mons' cellars.
