Bleu des Causses is an AOP blue cheese from the rugged highlands of Aveyron in France. It was born from the desire of local cheesemakers to create a cow's milk equivalent of the famous Roquefort - and they succeeded brilliantly. The cheese is matured in natural caves, where the constant humidity allows the blue mold to grow naturally. It has a full-bodied, intensely salty and delicately creamy taste. A true classic among blue cheeses!
