Crottin de Chavignol is a classic French country cheese with a fresh, mushroom-like aroma.

Since the 16th century, farmers in the Sancerrois region have raised goats and made cheese, which takes its name from the small ponds from which farmers took clay to make cheese molds.

Young cheese matures for at least 15 days, and small lumps of cheese that have matured for up to 60 days are classified as mature cheese. As the cheese matures, beautiful, light blue and gray molds develop on the cheese, which give the cheese a mushroom-like flavor and emphasize milky nuances. The cheese is dense in appearance.

Our Crottins usually take about 20-30 days to mature.

A classic among classics, Crottin de Chavignol is a goat cheese that is perfect with a crunchy salad paired with a fruity and full-bodied Sancerre wine.
