Manchego is certainly one of Spain's most beloved cheeses, and for good reason!

The cheese from the La Mancha region, made from the milk of local Manchega sheep, is already mentioned in Cervantes' "Don Quixote", where Manchego was enjoyed with freshly baked bread and young, fruity red wine.

Our Manchego is a so-called "curado" or matured cheese and is aged for 9-12 months. It is made in the rustic style from whole raw milk. During the first 60 days of the cheese, it is turned and rubbed regularly until its surface is covered with a waxy substance and left to mature.

Manchego has a slightly sweet and piquant taste, a semi-hard texture and a suitable moisture content.
