Poacher 50 is a rare, matured special batch of Lincolnshire Poacher Cheddar that was born by accident but survived because of its flavour. When the milk temperature was once raised above normal - to around 50°C - a cheese was created with a different texture and ripening behaviour. And when the pandemic brought a quieter period, the dairy decided to test what would happen if this exceptional cheese was matured for longer than ever before.

Poacher 50 is matured for over 4 years, making it exceptionally powerful, deep and layered. It combines the saltiness of cheddar, the nuttiness of Comté and the caramel notes of aged gouda. The texture is dense, dry and crumbly - one that almost requires a small knife or your fingers to crumble.

The cheese is traditionally made from raw milk on the family farm Ulceby Grange, where Jones brothers Simon and Tim continue in their father's footsteps. The milk is sourced from the farm's own cows, and the cheese is matured using natural rind and its own ripening cellar.

Poacher 50 doesn't need much introduction. Small pieces with a good beer or port, grated on pasta, or as the crowning touch of a layered cheese plate. It's a cheese for those looking for an intense, deep and salty flavor – and for whom cheese is more than just a side dish.
