MEET THE PRODUCER
Tim and Simon Jones are brothers who run their family farm in Lincolnshire, England. Their farm, Ulceby Grange Farm, has been in the family since 1917, and they are the fourth generation to run the farm. In the early 1990s, Simon Jones returned to the farm after completing his agricultural studies and began looking for ways to increase the profitability of the farm. He decided to experiment with cheesemaking and began developing his own cheese that would combine the qualities of traditional cheddar with alpine-style cheeses such as Comté and Gruyère. This is how Lincolnshire Poacher cheese was born, named after an English folk song. Lincolnshire Poacher is made from unpasteurized milk from the farm’s own 230 Holstein-Fresian cows. The brothers are committed to high quality and traditional methods of cheesemaking. The flavour of the cheese varies depending on the ripening period: when young it is fruity and sweet, while after longer ripening the flavour deepens and takes on nutty and savoury notes. Lincolnshire Poacher has achieved a reputation both in the UK and internationally. Tim and Simon Jones' dedication to quality cheesemaking and respect for tradition has made Lincolnshire Poacher a highly regarded cheese, representing the very best in British cheesemaking.
