MEET THE PRODUCER
L'Artigiano della 'Nduja is a family business founded by Luigi Caccamo with a passion for preserving and ensuring the originality and authenticity of Spilinga's 'nduja. Spilinga, located in the province of Vibo Valentia in Calabria, has long been known as the home of this iconic spreadable salami. It is no coincidence that the town is called "the city of 'Nduja", as its inhabitants have passed on traditional production methods and craftsmanship for generations. Luigi and his wife Graziella carefully select the chilli pepper seedlings that they entrust to six small local farmers. The chillies grow in the open fields between Capo Vaticano and Monte Poro, where the soil characteristics and climate are ideal for their natural development. The harvest begins in late August, when the chillies are picked and left to dry in the sun for two months. After drying, they are washed, stemmed, chopped and packaged – ensuring that this high-quality pepper can be used all year round in the production of 'nduja. L'Artigiano della 'Nduja is not just a manufacturer – it is a keeper of tradition, whose products reflect the traditions of Spilinga, the spiciness of Calabria and the passion for authentic flavours.
