'Nduja is a versatile, intensely flavoured and full-bodied Calabrian spreadable salami that adds spiciness and depth to food. Its soft, almost pasty texture and strong chilli flavour make it the perfect addition to many dishes.

The traditional Calabrian 'nduja is made with pork lardo, cheek and bacon, seasoned with naturally dried chili peppers from the Monte Poro area. These chilies are grown without chemical treatments, taking advantage of the area's even moisture balance, which allows them to grow naturally.

In late August, the chilies are harvested and dried outdoors for two months. After that, they are washed, stemmed, chopped and packaged so they can be used all year round.

Pro tip: 'Nduja should be added to food in small portions because of its strong and spicy flavor. It melts quickly in heat, so it's best added at the end of a dish to retain its full flavor.
