Chabichou du Poitou is a soft goat's milk cheese originating from the Nouvelle Aquitaine region in southwestern France.

Since 1996, the AOP has given this traditional cheese the seal of protected designation of origin. In their "Cahiers de charge" document, they have limited the milk used to three breeds of goat. In practice, only milk from Poitevine, Saanen and Alpine goats, which are allowed to graze, can be used.

Despite its strong goat aroma, this Poitou specialty has a delicately tart taste with a tangy aftertaste. The cheese is usually aged for 10-30 days. After about 6 weeks of aging, it becomes spicier and nuttier.
