This small, handmade, soft Provençal goat cheese is wrapped in chestnut leaves. The cheese ripens for only 10 days. The milk comes from Rove goats, which are an indigenous breed of Provence known for their exceptionally rich and honeyed flavor. No salt is added to the cheese, but it gains a pleasant tannin from the chestnut leaves.

The name Mistralou comes from Provence's famous Mistral wind. This soft goat cheese is like an extension of the region's nature - it has creaminess, a slight tang, and a natural balance that makes it a versatile cheese for both cheese boards and as a finishing touch for dishes.
