Puntarelle is an Italian chicory, a typical vegetable of the Salento region, harvested in January-February. The shoots, known locally as "scattuni", are hand-picked, seasoned, matured for a few days and finally preserved in a high-quality sunflower-olive oil blend.

Serve in the classic way with anchovies, or cod carpaccio and arugula salad.
