Caseificio Gennari was founded in 1953 when Maria and Sergio set up a cheese factory in the village of Collecchio, near Parma. From three cheese wheels a day, Gennari has grown to a family of one hundred; the cheese factory's employees are mainly Maria and Serio's children and grandchildren, who have continued and developed their parents' cheesemaking traditions.

Oro Nero al Tartufo is one of Gennari's latest and most celebrated cheeses. The name "oro nero" means black gold, which comes from the black-colored surface of the cheese, and the intoxicating black truffle.

Oro Nero is made like Parmigiano Reggiano, but with whole milk, which gives the cheese its luxurious creamy taste and texture. The approximately 10 kilo cheese is aged for 6-9 months, after which it is branded with fire and painted black.

On the palate, Oro Nero is almost truffle-like, combining fruitiness, saltiness and a blood-stoppingly delicious creaminess. Oro Nero is one of the most amazing cheeses we have tasted. The cheese is perfect with a cold Riesling or champagne, or to add flavor and creaminess to risotto.
