MEET THE PRODUCER
Joe Schneider is an American-born cheesemaker best known for creating Stichelton cheese. He has worked as a cheesemaker in both the Netherlands and the UK. In 2004, Joe Schneider and Randolph Hodgson, owner of Neal's Yard Dairy, decided to revive the traditional blue cheese making process from unpasteurised milk. They set up the dairy on the Welbeck Abbey estate near Worksop in Nottinghamshire. As the Protected Designation of Origin (PDO) for Stilton cheese requires the use of pasteurised milk, their cheese could not bear this name. So they named their new cheese Stichelton, an old form of the name of the village of Stilton. Stichelton has gained a reputation as a high-quality blue cheese, and has been featured in numerous cheese publications and events. Joe Schneider's dedication to traditional cheesemaking methods and quality raw materials has made Stichelton a highly regarded cheese both in the UK and internationally.
