On the edge of Sherwood Forest is a small cheese factory where cheesemaker Joe Schneider has revived an old recipe. It's the original Stilton blue cheese, but made the old-fashioned way. This means it's made from raw milk and only with animal rennet. The modern Stilton is protected, and only pasteurized milk can be used.

On the palate, Stichelton is like a magnificent old gentleman, with a strong flavour that has no pungency at all, but a perfect nuance. Fruity, tasty and salty - the perfect accompaniment to a cheese board!
