Cassoulet is one of the most beloved dishes of southwestern France: a hearty, slow-cooked casserole of tender white beans, succulent meat and a deeply savoury sauce. It's French country cooking at its most comforting, and exactly the sort of thing you want on a cold autumn or winter evening.

Maison Valette's traditional cassoulet brings together creamy Lingot white beans, two grilled Toulouse sausages and two pieces of duck wing confit. Duck confit is a French classic, made by slowly cooking duck in its own fat until beautifully tender and flavourful. Combined with the herb-seasoned beans and rustic pork sausages, it makes a wonderfully satisfying meal.

Cassoulet is best reheated in the oven. Pour into an ovenproof dish, sprinkle with a little breadcrumb and heat at 160°C for around 30 minutes, until bubbling and golden on top. Finish with some freshly chopped parsley if you fancy. Serve with crusty country bread and a good bottle of red wine.

Ingredients: Lingot white beans, sauce (water, pork rind, tomato purée, onion, modified maize starch, herbs and spices, salt, poultry extract, pepper), 2 grilled Toulouse sausages 13% (pork and pork fat, natural pork casing, salt, pepper), 2 duck confit wing pieces 13%.
