Cantal AOC is one of the oldest cheeses in France, dating back to the Gallic period. It was granted Appellation d'Origine (AOC) status by the Cantal region in the Auvergne region in 1956. This has ensured that the semi-hard, uncooked, pressed cheese has the characteristics of its area of ​​origin.

Cantal is made using a version of the Cheddaring process. Cheddaring is a unique process in the production of cheddar cheese, in which the curds are stacked on top of each other to squeeze out more whey from the cheeses below. The name comes from Cheddar in Somerset, where the cheese has been made using this method since ancient times.

Cantal Jeune is a young version of Cantal cheeses, having been aged for only 30-60 days, developing a thin grey-ivory rind and a smooth, pale yellow, dense texture. It has a fresh, sweet, milky flavour with hints of hazelnut and vanilla.

The milder taste is perfect for the breakfast table and the cheese is a favorite of French children! The cheese is also perfect as a filling for grilled cheese sandwiches.
