Long before the French cheese scene was filled with countless producers of small, creamy cheeses like it is today, there was Chaource.

Originating in the 14th century in the village of the same name, Chaource's production is now mostly concentrated in the Burgundy region.

The young version barely gives way beyond its rind, with a creamy yet firm center and a tangy, milky flavor. Choose the matured cheese if you want a melty, seductive interior with a more complex flavor of mushrooms, nuts, and savory cream.

This sublime beauty is absolutely divine before dinner with champagne or Cremant de Bourgogne rosé.
