This is Greek PDO feta cheese, made from sheep's milk (and up to 30% goat's milk) and traditionally aged in wooden barrels in brine. Barrel aging gives the feta a deeper aroma and a softer texture than regular feta.

The cheese is produced on a small scale in the Magnesia region of Greece, where the curd is cut, drained, and pressed before being transferred to wooden barrels to ripen in natural brine.

The texture is crumbly but melts in the mouth, the taste is initially fresh and salty, finally with a soft lamb-like flavor.

Serve in salads, with roasted vegetables, or as a finishing touch for warm dishes – it's especially good with watermelon, olive oil, and herbs, for example.
