Anchovies have been a staple of southern European cuisine for millennia. They were an everyday way to preserve fish in a time when there was no cold chain. Salt made it possible to transport and store them - and at the same time created a flavor that is still an essential part of Mediterranean cuisine.

The fillets are salted immediately after being caught. The salt firms the meat and intensifies the flavor. They are then packed in oil. A good anchovy is firm and balanced, not too soft or pungent.

These are Engraulis encrasicolus and preserved in olive oil. A small amount is enough to add depth to a dish, but they also work well on their own.

Use on bread with butter, as an antipasti, as a base for pasta sauce with garlic, in Caesar dressing or on pizza.

Highly salty.
