The name "pecorino" comes from the Italian word for sheep: pecora. Pecorinos are some of Italy's oldest cheeses, and almost every region has its own style of Pecorino. Eight of them are protected by a PDO (Protected Designation of Origin).

Cave-aged Pecorino Fossa is what is called "pecorino stagionato" or matured.

The Beltrami family's cheesemaking philosophy is truly artisanal: working with nature, with hands and eyes open, with animal welfare as a priority.

"Fossa" means "pit" in English, and like all pecorinos of this type, Beltrami's Pecorino Fossa spends about a year maturing inside natural stone at Palazzo Rusticucci in Umbria. This gives the cheese an uneven surface! Fossa aging gives the cheese a rich, slightly fermented aroma and a strong, rustic flavor

Fossa is great with fresh sweet pears or drizzled with honey to end a meal.
