French Marshal Henry de Senneterre made Saint Nectaire famous by bringing it to the table of King Louis XIV in the 17th century. This cheese remains one of the most famous in the Auvergne region and is still produced by around 200 traditional cheesemakers. Its character develops during maturation, which requires great expertise.

Traditionally, it is matured on rye straw for at least 70 days to ensure its skin, texture and flavor are at their best!

In 1955, Saint-Nectaire was the first country cheese in France to be granted Appellation d'Origine Contrôlée (AOC) status.
