Soumaintrain is a country-style (fermier) French cheese made from raw cow's milk in the Burgundy region of France.
The soft, unripened cheese has a distinct red mold pungent, yet sweet and creamy taste, resulting from several washes with brine and a solution of Marc de Bourgogne. The amount of Marc de Bourgogne is increased during ripening until the cheese develops a wonderfully orange, aromatic and sticky rind.
Usually eaten young, Soumaintrain reveals a mild, white paste with a dense and fine texture when cut. As it ages for six to eight weeks, the flavors mature and reveal sweet, salty and creamy milky notes, as it matures you can also taste hints of peanut!
The cheese tastes excellent with Chablis, Rose, Petite Sirah and of course Marc de Bourgogne.
