Ovalie Cendrée is a small, oval goat's milk cheese that immediately catches the eye with its appearance: its gray-black rind is covered with a thin layer of plant-based ash. The heart of the cheese is snow-white, silky soft. The taste is refined but at the same time clear: fresh milky and citrusy when young, then developing into a nutty and slightly spicy flavor. Under the rind, you can sometimes sense almost mushroom-like, forest-like notes that develop during maturation.
