The village of Bra is turning into a cheese mecca - and Rolling Cheese is there!

Bra is a town of around 30,000 inhabitants in the Piedmont region of northwestern Italy, right next to the wine town of Alba and the Barolo wine region. Although small, Bra has had a huge impact on food culture: it was here that the Slow Food movement began in the late 1980s, when locals wanted to defend their region's food traditions and oppose the rise of fast food. Today, Bra is known for its quality, tradition and, of course, the fact that every two years the entire village is transformed into the stage for the CHEESE festival .

The Slow Food movement was founded in 1989 as a counter-force to globalisation and industrial food production. Its philosophy can be summed up in three words: good, clean and fair. The aim is to cherish local ingredients and food traditions, support small farmers and artisan producers and guarantee a fair and sustainable food system. Slow Food has its roots in Bra, but today it has members in over 160 countries. The CHEESE festival is one of the movement's most important events and one of the clearest examples of its principles in practice.

Raw milk cheeses are made from milk that has not been pasteurized, i.e. heated to high temperatures. This means that the milk retains all of its natural bacteria, enzymes and flavourings. This is what makes raw milk cheeses so multi-dimensional and unique: their flavour changes with the seasons, the animals’ diet and the conditions on the farm.

Raw milk cheeses have a long tradition in Europe, and many of the most famous cheeses - such as Comté, Roquefort and Parmigiano Reggiano - are based on this very idea. They are both cultural history and living food heritage, and defending them is one of the main tasks of the Slow Food movement. For Rolling Cheese, raw milk cheeses are a natural part of our philosophy: authenticity, sustainability and delicious flavors that reflect their origin.
